About the People

Masaki Nakayama, Owner and Chef de Cuisine

"After I graduated High School, I started as an apprentice in the kitchen of a Ryokan, a traditional Japanese inn. During 7 years i've learned there for 7 years the art of Japanese Kaiseki. Kaiseki is the traditional Haute Cuisine in Japan. After 7 years I started working with my father here in our family business. He taught me how to prepare eel, since our restaurant is famous for grilled freshwater eel dishes. We are a very old business and I am very thankful for the perfect landscape here in the area. I think we are only able to serve tasty and fresh seafood, if also the environment gives us the chance to do so. The mountains in Hakone and the ocean in Odawara is a perfect combination. The fresh water from the mountains in Hakone, which runs into the ocean in Odawara, makes the fish here really good."
